Raita recipes are Indian yogurt recipes. Yogurt (dahi) is used as a sauce or dip.
The yogurt is seasoned with herbs and spices to give it a flavor. Different vegetables are mixed in it.
The mixture is served chilled. Raita has a cooling effect on the palate which makes it a good accompaniment for spicy Indian dishes.
Raitas go well with almost any Vegetarian or Meat dish. Even when you don't want a heavy lunch, a bowl of raita is fit for a light lunch. It is nutritious and filling (depending on what you add in it).
Most of these recipes are very quick and easy to prepare .If you use a low fat yogurt, these recipes are very healthy as well.
