Seafood Soup recipe




This seafood soup recipe has it all. Clams, prawns, fish and vegetables. Needless to say it is a very healthy seafood soup. Serve it with a good bread or even rice and this becomes a healthy meal. It has a nice tangy, spicy, fishy and seafoody flavor. Reduce the tomatoes to reduce the tang.

To make this seafood soup you will need

  • 3-4 Tbsp Butter
  • 1 Tbsp chopped Garlic
  • 1 Large Onion (chopped)
  • 2 Potatoes (diced into 1 inch cubes)
  • 2 Carrots (diced into small cubes)
  • 1/2 Courgette (diced)
  • 200-300 gm Sweet corn kernels (just use a can if you want)
  • 1 Green Chili (chopped)
  • 4-5 Tomatoes (pureed and passed through a sieve)
  • 1 Bay Leaf
  • 1/2 Star Anise
  • Salt and Pepper to taste
  • 1/4 Tsp Dried Thyme
  • 1/4 Tsp Sage
  • 1 lt Fish or Chicken or Vegetable stock
  • 200 gm assorted white Fish chunks (or you can use just one type)
  • 200 gm Prawns (cleaned and deveined)
  • 400 gm Clams (with shell)
  • 1-2 Cups of Water

Boil the water in a saucepan and cook the prawns for 3 minutes. Take them out with a slotted spoon. In the same water add the clams and close the lid. Shake a few times. Keep the flame high. Open after 3-4 minutes. Take all the open ones out with a slotted spoon and keep with the prawns.

Strain this water to be used with the rest of the stock.

In a pan melt the butter and saute the onion and garlic till soft (not brown). Now add the pureed tomato and bring it to a boil. Cook for 8-10 minutes and add the potatoes, carrots, courgettes, corn and the stock. Also add the salt and pepper, bay leaf, thyme, sage and star anise.

Boil, then cover and simmer for 15 minutes or until the carrots are soft and potatoes get cooked.

Check the seasoning. Make adjustments if any.

Now bring it to a boil again and slip in the fish pieces. After 3 minutes add the clams and prawns. When the fish seems just cooked turn off the heat (don't overcook or else the fish will disintegrate).

One last time check the seasoning and serve hot.

Note:- Take out the bay leaf and star anise before eating. If you want to slightly thicken the soup just mix 1 tsp of cornflour in 1 tbsp of water and add just after adding the fish.
