Hummus Recipe - A dip made from mashed chickpeas.




Hummus recipe is one of the most popular dip recipes. Very quick and easy to make.

Hummus is a dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is one of the popular appetizer recipes from the Middle East and Mediterranean.


Normally served in restaurants with toasted pitta bread, as an appetizer.

Tahini is a sesame seed paste in olive oil. Easily available in the supermarkets. In case you can't get it, you can use a home made version (look below).

This recipe is an authentic hummus dip recipe, which I have modified to my taste (very garlicy and hot). There are a number of ways to prepare hummus. You can always alter the quantity of ingredients to suit your taste.

The ingredients for making tahini at home are

  • 1 cup sesame seeds
  • 1/4 Cup Olive oil (little more if needed)
Heat a heavy bottom, non stick pan and then reduce the heat to the lowest. Put all the sesame seeds into it and keep stirring all the time, so that they are evenly toasted (make sure not to burn them). This should take about 5-10 minutes. No need to brown the seeds.

Allow the seeds to cool down. Put the seeds in a grinder/blender with the oil. Blend until a smooth paste is formed. You need a thick but pourable consistency. Add more oil, if required.

Tahini is ready. You can store it in the refrigerator. Alter the quantities to make more tahini.

How to make Hummus

  • 1 can (400 gm) of chickpeas or garbanzo beans (rinsed)
    {If using dry chickpeas, soak 200 g in water, overnight. Pressure cook them till soft}
  • 2 Tbsp Tahini paste
  • 4-5 Tbsp lemon juice
  • 2-3 cloves garlic (crushed)
  • Salt to taste
  • 2 Tbsp Olive oil (extra virgin)
  • 1/2 Tsp Roasted Cumin seed powder(optional)
  • 1 Dry red chili
  • 2 Tbsp Greek yogurt (or any yogurt)
Place all the ingredients in a blender or food processor. Blend for 3-5 minutes until thoroughly smooth. If it is too thick, add 1-2 tbsp of water. Sneak a taste and make adjustments if any.

Place the hummus in serving bowl, and make a shallow well in the center of the hummus.

Add 2 tbsp of olive oil in the well. Garnish with parsley/coriander,
olives and paprika.

Serve immediately with toasted pita bread. Or refrigerate it until ready to be used.

Hummus can be refrigerated for up to 3 days and can be kept in the freezer for up to one month.
