A Healthy Soup Recipe





This healthy soup recipe is one of my favorite easy vegetable soup recipes. It is a no hassle and quick recipe. If you have a pressure cooker, making this soup is a breeze. But even if you don't have a pressure cooker you can simmer the ingredients until cooked.

Either way it is a tasty and healthy soup recipe.

This is a good recipe for toddlers who don’t like chewing on vegetables.The ingredients I have used are a guideline only, please use any vegetables that are available.

This soup is a vegetarian soup but you can add some chicken or any other meat really if you want. Suit yourself. This is a delicious, low fat soup. Add some butter if you like (especially for children).

For making this pressure cooker soup you will need

  • 1 Carrot
  • 2 Tomatoes
  • 1 medium Onion
  • 200 gm Bottle gourd (approx)
  • 1 clove Garlic
  • 3 Tsp moong dal (uncooked yellow moong lentil)
  • 2 Tbsp Wheat Porridge (uncooked)
  • 3 Cups of Vegetable stock or Water
  • ½ Beetroot
  • 10-12 Spinach leaves
  • 4 Tbsp fresh Coriander leaves
  • 1 green chili (optional)
  • Salt and pepper to taste
  • ¾ vegetable stock cube or chicken stock cube

Chop all the vegetables finely and put in a pressure cooker with the water or stock. Wash the lentils and porridge and add those too. Also put in the stock cube, salt and pepper (don't forget that stock cube contains a lot of salt). Pressure cook until the first whistle and simmer for 15 minutes after that.Remove from the cooker and blend the soup. Sneak a taste and adjust the seasoning.

Kindly Note:-If not using a pressure cooker, put all the chopped ingredients in a deep sauce pan or pot. Bring it to a boil, then cover and simmer until vegetables are soft.

Pass it through a sieve for a creamy texture.

Sprinkle some fresh coriander and put a knob of butter or cream (optional).

Note:-If using chicken add 2-4 pieces of chicken on the bone, along with the rest of the ingredients. Proceed with the recipe.Only thing just remove the bones from the chicken before blending. Add more boiled water if too thick.
