Carrot Salad - A Simple but Delicious Salad Recipe
This Carrot Salad is a good mix of high fiber and proteins. Low in calories.
Carrots are a good source of beta carotene (which the body breaks down into vitamin A) and fiber.
Tofu (also known as bean curd) is an excellent source of protein, calcium and vitamin E.
So all in all a healthy salad recipe.
Ingredients for this easy summer salad are
- 2-3 Carrots
- 1 Green or Red Bell Pepper(capsicum)
- 200 gm of Tofu(Bean curd)
For the dressing
- Juice of 1 lemon
- 2 Tbsp of extra virgin olive oil
- 2-3 Tsp of honey
- Salt to taste
- 1/4 Tsp Black pepper
- 1 Tsp dried oregano
Peel, dice and steam the carrots. Meanwhile chop the capsicum and blanch it in hot water for 3-4 minutes and immediately rinse in cold water (or use it raw if you prefer).
Cut the tofu in three big strips. Fry till light brown on all side and drain well on paper. Cut it further into smaller cubes. You can use it as is, without frying, especially if it is fresh herbs tofu.
Put all the ingredients listed under dressing in a small bottle or a plastic tub with a air tight lid. Shake vigorously.
Tip all the vegetables in a bowl and pour the dressing on top. Toss nicely till all veggies are well coated (the vegetables should be at room temperature).
Sprinkle with some chopped coriander or parsley if you want. The salad is ready to be served.
Julienne the carrots and omit the other ingredients.Pour the dressing and toss well. Enjoy your crunchy carrots .Variation 2
