In India halwa or kada prasaad is also made on religious occasions, as prasad (offering to God). It is distributed in temples and gurudwaras after the prayers to the devotees as a blessing.
- 1 cup sooji (rava, semolina flour, use the fine semolina not the thicker one which is used for upma)
- 1/4 cup Desi ghee (clarified butter)
- 3/4 cup Sugar
- 3 cups Hot Water
- 3-4 Green Cardamoms (Peeled and powdered)
- 1/2 cup Assorted dry fruits and nuts (almonds, cashews and raisins)
Method:
In a non stick pan add the ghee and roast the nuts for 2-3 minutes until light brown. Add the raisins as well and keep roasting on a low heat till they puff up. Using a slotted spoon, remove them on to a plate.
In the leftover ghee, roast the sooji/semolina on a low to medium heat, stirring constantly (for even browning), until light brown. Reduce the flame if it is getting darker quickly.
To this add the sugar and water and give a quick stir. Also sprinkle the cardamom powder and the roasted dry fruit and nuts. Keep stirring gently on a medium heat. You will see that the semolina is beginning to absorb the water.
That's it when all the water it almost absorbed, sneak a taste to check that the semolina is cooked. Turn the heat off, cover and let it stand for 5 minutes.
Serve Hot and Enjoy!!
Tip:- If using semolina which is thicker, please keep more hot water handy. Add some hot water (little at a time), if needed.
Instead of water you can also use milk or 1/2 milk and 1/2 water.
