Lemon Rice - An Indian Rice Recipe




Lemon rice, as the name suggests is rice with a lemon flavor. It is a very popular, Indian rice recipe specially in the southern states of India.

It is a very quick and easy recipe. If you happen to have some leftover boiled rice then "perfecto". Put it to use (just adjust the quantity of the rest of the ingredients accordingly.)

If you want you can even add some vegetables of your choice, to make this a healthy meal.

The ingredients are as follows

  • 1 cup Long grain Rice (boiled and kept aside)
  • 1/2 Tsp Mustard seeds
  • 1 Tsp of white Urad dal (white Matpe / black gram lentil available in Indian stores)
  • 1/2 Tsp of Chana dal (Bengal gram)
  • 1/2 Tsp Ginger (finely chopped)
  • 2 Green Chilies (chopped)
  • 6-7 Curry leaves
  • 2 Tbsp Peanuts (with skin)
  • 1 Tbsp Cashew nuts or almonds (chopped, optional)
  • Salt to taste
  • 3 Tsp oil
  • 1/4 Tsp Turmeric powder
  • Juice of 1 Lemon
  • Keep the boiled rice ready.

    In a pan or kadai, heat the oil and add the mustard seeds. They will splutter, so maintain a safe distance. When the spattering noise stops, add the two dals (don't wash them). Reduce the heat.

    When the dals become pinkish, add the ginger, chilies and curry leaves. Stir for a minute and add the peanuts and cashews (if using). Now add the turmeric and salt.

    Mix the rice in and gently fold in order to coat all the rice.

    Add the lemon juice, mix again. Cook for a couple of minutes and turn off the heat.

    Enjoy your lemon flavored, tangy rice.
