Khichdi - Rice and dal recipe





This khichdi is a Indian rice recipe made from rice and dal (split moong lentils are best) and is especially good for an upset stomach or when you are recovering from an illness. But you can still make this as a quick meal even on your good days. I have given suggestions to make it little more appealing and yet light.

This healthy recipe can be prepared in mere minutes.

You will need

1/2 cup rice
1/2 moong dal (split green lentils. not whole lentils)
1 Tsp Ghee (clarified butter or butter or oil)
1/4 Tsp Cumin seeds
Salt to taste
3 1/2 cups of water

Wash and soak the rice and dal (split green lentils) in 3 1/2 cups of water, for 15 minutes. Heat a pressure cooker. Add the oil and cumin seeds. Add the lentils, rice, water and salt. Close the lid and pressure cook until the first whistle.

The consistency for this should be a little runny, for easier digestion.

Variation

In the oil after adding the cumin, add 1 chopped onion and a green chili and fry until it browns. Now add the rice and lentils but reduce the water to 2 cups. Add some garam masala (1/2 Tsp). Pressure cook until the first whistle.

Note
In case you don't have a pressure cooker, you can still make this in a heavy bottom pan with a lid. Follow the recipe till you add all the ingredients, then bring it to a boil. Close the the lid and simmer until cooked.
