French Onion Soup Recipe


French Onion Soup Recipe involves caramelizing the sliced onions in butter and oil (ooooooh), with some sugar, on a low heat till they are golden brown. The flavor comes from these onions. Actually that is all that there is to this onion soup.

This caramelized onion soup recipe will serve 4.

The Ingredients required for this french onion soup recipe are as follows

  • 20-30 gm butter
  • 2 Tbsp oil (sunflower is ok)
  • Half Kg medium sized Onions (sliced)
  • 1 Tbsp Castor sugar
  • 3 Tbsp Plain flour (or little more)
  • 1 lt of Beef stock (or vegetable stock)
  • Salt and Pepper (to taste)
  • Garlic croutons

Melt the butter with oil in a heavy bottom pan (the oil prevents the butter from getting burnt). Add all the onions and on a medium heat cook till onions start to soften.

At this stage add the sugar and cook on a low heat till the onions start become golden brown. Don't forget to stir occasionally to get an even color.

Sprinkle the flour and cook for 2-3 minutes stirring constantly.

Gradually add the beef or vegetable stock. Stir to mix. Add the salt and pepper. Sneak a taste.The flour should thicken the stock. You can adjust the consistency of the soup by adding more stock (if too thick) or flour (if too thin).

Kindly Note:- If adding more flour, please sprinkle on the soup and stir in immediately to mix it all in.There should be no lumps. Make sure to cook/simmer the soup for 10 minutes. The flour will get cooked by then.

Another easy way to thicken the soup will be to dissolve 1 Tsp of cornflour in 2 tsp water and add it to the soup. Stir constantly and cook for 3-4 minutes.

To make garlic croutons you need

  • 4 Bread slices (edges trimmed and cut into 1 cm cubes)6-7 Tbsp Oil (Sunflower)
  • 2 Cloves of Garlic (crushed)

Heat the oil in a pan, add the garlic and stir.

Turn the heat to medium low and add the bread cubes in small batches. Stir to brown them evenly on all sides. Top up the oil if need be. Take out using a slotted spoon and drain on kitchen paper. To serve the soup, add a few garlic croutons in the soup bowl before serving.
